1. an herb like a thistle, with large, white to brilliant red flower heads. It is an Old-World composite plant, the seeds of which yield an oil used for cooking.
2. its dried petals, used in making certain red dyestuffs and in medicine as a substitute for saffron.
3. the red dyestuff.
[earlier safflore (spelling influenced by flower), probably < Dutch saflor < earlier Italian saffiore, alteration of zaffrole; origin uncertain]
